Morning's Bakings

Most of the time I'm a famished breakfast person, sometimes I'm not, I have to work up an appitite, but either way I love the smell of something baking in the morning. I woke up to these two things the other day.
Yes, I have a maid.
She's like a sister to me.



Baked Ham and Eggs Gratin - The BIG Book of Brkfst
Cooked ham
Mushrooms sliced
Green onions
Cherry tomato's
1 or 2 eggs
Salt and Pepper
Grated Cheese for topping

Preheat oven to 400 degrees F. Butter and individual gratin dish. Layer ham, mushrooms, green onions and tomato slices in dish. Break eggs on top. Season with salt and pepper to tast. Bake until eggs are set, that'll be about 15 min. Sprinkle with cheese and bake until cheese melts.






Orange - Nut Bread w/ Dried Cranberries - The BIG Book of Brkfst

2 cups all - purpose flour
1 cup sugar
1 T. baking powder
1/4 t. ground nutmeg
1/4 t. salt
2 large eggs
3/4 cup orange juice
1/4 cup veg. oil
1 cup dried cranberries
1/2 cup coarsely chopped walnuts
2 t. grated orange zest
Preheat oven to 350 degrees F. In a large bowl, combine flour, sugar, baking powder, nutmeg and salt.
In a medium bowl whisk together eggs orange juice, and oil. Make a well in the dry ingredients and add egg - orange juice mixture all at once. Stir until just blended. Fold in cranberries, nuts, and orange zest. Do not overmix. Pour batter into a rusty trusty, lightly sprayed or oiled 41/2 - by - 8 1/2 - by 2 1/2 - inch loaf pan.

Bake about 50 min. Cool on a rack for 10 min.

My maid has a gazillion favorite books and this is in the top ten. She loves it, eats with it, sleeps with it, reads it in her leisure time... it's marvelous.
